Hello! My name is Emma Eggen, I am Registered Dietitian who recently completed my dietetic internship at OSF St. Francis Medical Center in Peoria, IL. I received my bachelor's degree in nutrition from the University of Minnesota - Twin Cities in the Spring of 2021.

I am so grateful for all the experiences I've had at OSF and I am amazed at how much growth and learning can happen in a single year. I pushed myself out of my comfort zone again and again, and gained confidence and capability as a result.

​

This year I discovered an undeniable passion for counseling others and cannot wait to see where this calling will take me. I also enjoyed any opportunities to use my creativity for education and hands-on demonstration, especially with the pediatric population.

My Food Philosophy

~Everyone deserves to feel at home in their body, and at peace in their mind.

~Food and movement are as much about quality of life and enjoyment as they are about health.

~Food and movement are only two aspects of health. Rest, social connection, emotional wellness, environmental & financial safety and security, ability to cope with stress, and spiritual fulfillment are just as important to our health and well-being.

~Health and well-being are more complex than the number on the scale.

~Healthy behaviors, lifestyle, and relationship to food and body will always be more important than body shape or size.

~With healing, change, and growth, the process can sometimes be more important than the outcome. Progress is never linear.

~In this field there will always be more to learn and endless opportunities to grow. I am prepared to be a humble, life-long learner to provide my patients with the care they deserve.

  • Gain experience counseling in an outpatient setting.

  • ​Become a certified yoga instructor and become skilled in utilizing embodiment practices in my work.

  • Become a certified Intuitive Eating Counselor.

  • Build a career focused on helping others find and cultivate a sense of home within their bodies.
